The Monica di Cagliari Superiore “Iselis” born in the Iselis estate in the Serdiana hamlet.
This wine is made by Monica grapes which are manually selected and picked.
The fermentation takes place with the maceration for 10-12 days is steel tanks at 28-30°C.
After the malolactic fermentation in glass cement for 10-15 days the wine must refine for 12 days in barrels.
It follows a further aging period of 6 months in bottle.
It is honored by the DOC Monica di Sardegna Superiore certification.
The vineyards are in a perfect Mediterranean climate with wind all over the year.
It has a ruby red color, the smell is intense and enveloping with marasca and
prune aromas together with vanilla and cinnamon.
The taste is soft and balanced with red fruits aromas balanced with sweet tannins and
a long and pleasant end.
It is perfect with sauces or fish soups, but also the lamb in humid, braised red meats and
aged cheeses especially the pecorino. It must be served at 18°C.
