The red ripen wine Pincarda DOC of the Garofali winery is produced in the DOC area of the Red Conero area.
This is the right soil for the Montepulciano grapes. It has a medium mixture and rich of calcareous.
There are used only Montepulciano grapes to produce a rich and structured red wine.
This sensational red wine is aged in traditional oak barrels for one year before being commercialized.
It has some marasca cherry aroma typical of the Rosso Conero wine and a pleasantly soft structure.
If well-conserved it is an aging wine.
The grapes are picked when completely ripe and it follows the destemming and
pressing of the grapes up to the fermentation which lasts 8-10 days on the peels.
It follows the racking off and the malolactic fermentation.
At the end there is the barrel aging period for 12 months and finally 6 months in bottle.
It can be aged for 4-6 years if well-conserved.
